Easy Mediterranean Chicken

3 boneless, skinless chicken breasts 1 small onion, sliced1 green pepper, sliced2 cloves garlic, chopped1/4 cup sun-dried tomato, chopped1 Tbs parsley, minced1 chicken boullion cube, dissolved in 6 oz. waterFresh ground black pepper 1 tsp garlic powderMrs. Dash Garlic & Herb Seasoning3 servings of capellini (or any other pasta)Cooking spray (can use 2 tbs olive oil instead)
Cut chicken breasts into small pieces, about 1" thick. Mix garlic powder, Mrs. Dash & ground black pepper & sprinkle over chicken pieces. Spray sautee pan w/ cooking spray & cook chicken pieces over med/high heat until browned - approx 5 minutes, turning chicken occasionally (chicken will not be cooked through at this point). Add green peppers, onions, garlic, sun dried tomatoes and parsley. Sautee over medium heat for approx. 5 minutes...be careful not to burn the garlic. Add the chicken broth and bring to a simmer. Turn the heat to low, cover & simmer for 10 minutes or until chicken is cooked through. Serve over capellini. Makes 3 servings.
