French Toast for Tomorrow

1 pound loaf Challah, sliced.Smart Balance Buttery Spread, 3 tbsp Brown Sugar, .25 cup, unpackedCinnamon, ground, 1 tsp Egg, fresh, 3 large Egg substitute, liquid (egg whites), .5 cup Milk, 1%, 1.25 cup Orange Juice, .25 cupSalt, 1 dash Butter, unsalted, 2 tbsp
Place melted butter and 2 tbsp smart balance in 9 x 13 pan. Add brown sugar and cinnamon. Mix well and spread over bottom of pan. Cover with 2 layers of bread slices. Beat eggs, milk and salt. Pour most of egg mixture less 1/2 cup over bread; Cover and refrigerate overnight. Uncover and pour remaining egg mixture over challah. Let sit on counter for 15 minutes. Bake at 300 degrees (on convection) for 30-40 minutes or until knife comes out clean and it is not squishy.
Dot the top w/ the remaining 1 tbsp smart balance near the end of cooking and also broil at the end to get it brown and crispy.
Makes 12 servings. When serving, cut bread slices in half (the 2 layers of bread will create one THICK piece of bread).
Can also put 1 tsp of fruit spread between slices before adding egg mixture. Or, zest a lemon or orange and add to milk/egg mixture.
