Ingredients
Tofurkey Italian Sausage (2 Sausages, dicedBeans, white, (1 can)Sweetpotato, medium, dicedCelery, 3 stalks, dicedOnions, 1 medium, dicedGarlic, 2 tsp, mincedDiced Tomatoes, 1canSwiss Chard, 6 cup, choppedCarrots, 2 medium, dicedVegetable Broth, 2 cupWater, tap, 6 cupOregano, 1 tspBlack pepper, to tasteCrushed red pepper, to taste
Directions
Add all ingredients to soup pot.
Bring to a boil.
Reduce heat & simmer until all vegetables are tender.

    Bought a large, very lovely bunch of red Swiss chard, & looked for a recipe.This 1 attracted me because I have some canned butter beans & smoked sausage to use up, & had the rest of ingredients on hand.This recipe is a keeper; will definitely make again, only healthier after pantry stuff is used up. - 10/23/10

    This soup is amazing!!! I sauteed my sausage with onions and garlic first until brown, then added everything to the pot. I used just stock instead of adding the water. I only had a few fresh tomatoes on hand so I put in a can of rotel. It was soooooo amazingly good. this one is a keeper!! - 9/28/11
