Salsa Chicken Dinner for Two (crock pot)

Ingredients
1 lg chicken breast, cut in half1/2 cup brown rice1 can 98% fat free cream of chicken or cream of mushroom soup**1/4 to 1/2 cup salsa (I use pace picante)1/3 to 1/2 cup water (depending on texture and moisture you want. I prefer mine a little drier.)**to make gluten free, use gluten free cream of mushroom soup
Directions
Mix all ingredients in a small Crock Pot. Cook on low 4 to 6 hours, or until rice and chicken are done.

Makes 2 servings. 1/2 breast and about 1 cup of rice.

    My husband really like this recipe. I precooked the chicken ahead and put the crock pot on high for an hour. I used a small crock pot so everything was ready in about 3 hours it might of been longer if I hadn't the 10 minute brown rice. I used what I had in the house. - 2/4/14
