Balsamic Glazed Salmon

2 5oz salmon fillets1 Tbsp minced garlic2 Tbsp white wine1 1/2 Tbsp balsamic vinegar1/2 Tbsp honey1 1/4 tsp dijon mustard1/4 tsp black pepper1/4 tsp salt1/4 tsp oregano
Preheat oven to 400 degrees. Line a baking sheet with foil and spray with cooking spray.
Coat a small saucepan with cooking spray. Over medium-high heat cook and stir garlic until soft. Mix in wine, honey, balsamic vinegar, mustard, salt and pepper. Simmer, uncovered for about 3 minutes or until slightly thickened.
Arrange salmon fillets on the prepared baking sheet. Brush fillets with balsamic glaze and sprinkle with oregano. Bake in preheated oven for 10 to 14 minutes or until fish flakes easily with a fork. Brush fillets with remaining glaze and season with salt and pepper. Serve immediately.
