Jo's Dangerously Delicious Turkey Chili

1 tbsp olive oil1 lb of extra lean ground turkey1.5 cans of diced tomatoes, no salt added1 6oz can of tomato paste1 small can of mushrooms1 cup diced green pepper.5 cup diced onion.5 cup diced celery1 can of black beans, drained.2 tsp garlic1 tsp oregano1 tsp ground cumin1 tbsp chili powder1 dash of chili flakes1 tsp salt
Makes 8 hearty servings
Preheat oven to 250 degrees.
Heat olive oil in pan & brown turkey with garlic, green peppers, onion, and celery. Drain 1/2 of the liquid from the pan & add the rest of the ingredients. Let simmer for 10 minutes.
Pour mixture into a deep 2 Qt casserole dish (spray cooking oil in dish to help prevent sticking). Bake covered at 250 degrees for 2 hours.
Serve with corn bread & light sour cream. (Corn Bread & sour cream are not included in the nutritional info, as they are optional)
