2 cups cooked chicken1 cup Onion, diced1 med Bell Pepper, diced1 clove Garlic2 TBSP Chili Powder1 can (10.75 oz) Cream of Mushroom (or chicken) Soup1 can rotel (to taste, may omit)1 TBSP water2 cups Cheddar Cheese, shredded6 low carb flour tortilla, fajita size - ripped in quarters

In a large pan, sauté onion & bell pepper. Add soup, tomatoes & chilies, garlic, chili powder, and water. Line bottom of a 9x13 inch pan with pieces of tortillas. Spread half the chicken over the tortillas and top with half of the sauce, then half of the cheese. Cover with another layer of torn tortillas, and repeat the chicken, sauce and cheese layers. Bake at 350F for 30 minutes or until bubbly.
freezes very well for make ahead cooking!
