Chicken Tetrazini

2 boneless skinless chicken breasts (cut into small pieces)8oz. 1/3 less fat cream cheese5 ounces sliced mushrooms 1 small onion, diced1 (14.5-ounce) can artichoke hearts, (in water)drained and chopped1/4 cup shredded Parmesan cheese2 cups chicken broth (99% fat free)1.5 cups cooked brown minute rice
Spray slow cooker lightly with cooking spray
Add all ingredients except rice to your slow cooker. Add a bit of salt and pepper. Cook on low for 4-6 hours or until chicken is cooked through. In the last 30 minutes add in cooked brown rice and stir.
* You could serve this with pasta instead but my husband hates pasta so I modified it.
