Oatmeal Raisin Cookies

2 tbsp soy milk1 tbsp ener-g egg replacer1/4 cup water2/3 cup light brown sugar1/3 cup canola oil1/2 tsp ground cinnamon1/8 tsp ground nutmeg3/4 cup flour1 tsp vanilla1/4 tsp salt1.5 cups quick-cooking oats1/2 cup raisins1/4 tsp baking soda
Preheat oven to 350 and line 2 baking sheets with parchment paper.
Mix ener-g, soy milk and water. Add sugar and oil, and mix until it resembles caramel, about 2 minutes. Mix in the vanilla. Sift in the flour, spices and salt. Fold in the oatmeal and raisins.
Drop by the tablespoon about 2 inches apart and flatten the tops. Bake 10-12 minutes depending on desired crunchiness.
