Cottage Cheese & Egg Muffins w/ Turkey Bacon & Cheddar

Ingredients
2/3 c. fat free cottage cheese1/4 c. grated parmesan1/4 c. Heart Healthy Bisquick2/3 c. Heart Healthy Bisquick1 tsp baking powder1/4 tsp kosher salt2 eggs, beaten1/4 c. liquid egg whites3 tbsp water3 strips of turkey bacon1/2 c. low fat cheddar cheese1 tbsp green onions/scallions
Directions
Preheat oven to 400 F.

In mixing bowl, combine cottage cheese, parmesan, Bisquick, baking powder, salt, eggs, and water. Mix until well combined, then gently stir in bacon, sharp cheddar, and green onions.

Spray foil muffin cups. Divide batter between nine muffin cups. Bake muffins 25-30 minutes or until lightly browned on top and set.

Kalyn's original recipe called for:
*1/4 c. white whole wheat flour and 2/3 c. almond meal - I used Bisquick
*4 eggs - I used 2 eggs and 1/2 c. of liquid egg whites
*1/4 c. finely diced ham - I used turkey bacon
*Makes 6 muffins - I was able to get 9
