Eggless Oatmeal Raspberry Scone

Ingredients
1 3/4 cup flour1 1/2 tsp baking powder3/4 tsp baking soda1/2 tsp salt1/3 cup sugar1/4 cup butter1 1/3 cup quick oats1/2 cup frozen berries3/4 cup milk1 Tbsp lemon juice.
Directions
Combine flour, baking powder, baking soda, salt and sugar in mixing bowl.

Cut in butter to flour mix

Add oats and milk to flour/butter mix until it starts to stick together. Knead for 3-5 minutes and cut into circular pie shape.

Press frozen fruit evenly over dough.

Bake at 400F for 20 minutes until edges are golden brown.

Cut across circle to make 8 slices.

1 serving = 1 slice.

    Very delicious, straight out of the oven! I had to put it in for 30 minutes, but it was worth the extra 10 minute wait. I used strawberries and they worked well. Will definitely be making this again! - 10/26/09
