Szechuan Chicken Lettuce Wraps

Ingredients
2 - Rotisserie Chicken Breasts1 cup - Mushrooms1/2 med - Chopped Red Bell Pepper1 cup - Chopped Red Onion1.5 tsp - Ground Ginger1 tsp - Salt2 tsp - Pepper2 tsp - Red Pepper Flakes3 cloves - Chopped Garlic1 tbsp - Lemon Juice4 tbsp - General Tso's Sauce2 tbsp - Lite Soy Sauce1 tbsp - Rice Wine Vinegar8 leaves - Bibb Lettuce
Directions
Sautee mushrooms, onions, red bell pepper, ground ginger, salt, pepper and red pepper flake together until sufficiently cooked through; not too soft.

Add garlic and lemon juice and sautee for another minute.

Add chopped rotisserie chicken breast to the mixture and cook for another minute. (If you are using raw chicken, cook chicken before adding it to the mushroom, onion, pepper mix.)

Add General Tso's sauce, soy sauce and rice wine vinegar and cook for another 5 minutes until everything is heated through thoroughly.

Serve in a bowl with brown rice on the side and let each person make their own lettuce wraps.

Makes 8 lettuce wraps.
