spicy, curried potato and cauliflower soup

Ingredients
5 small red potatoes, quartered8 cups tap water1 vegan boullion cube3 cups roasted cauliflower1 onion, diced4 cloves of minced garlic1/2 a shallot, dicedtsp olive oil2 tsp cumin1 tsp coriander1/3 tsp paprika2 roasted, peeled, diced jalapenosTbs cider vinegar
Directions
makes (6) 2-cup servings

boil potatoes in water with boullion until falling apart. blend mixture. in a separate pan saute onions, shallot, garlic in oil. add spices. deglaze with vinegar and water. add jalapenos after the saute is finished.
add cooked cauliflower and onion mixture to puree.
