Banana Oatmeal Cookies

Ingredients
3/4 cup shortening1 cup brown sugar, packed1 large egg, beaten1 1/2 tbsp soy flour1 1/2 tbsp nonfat dry milk1 1/2 tsp raw wheat germ1 3/4 cups + 1 1/2 tsp whole wheat flour1/2 tsp baking soda1 tsp cinnamon1/4 tsp nutmeg1 cup mashed banana1 3/4 cups oatmeal, uncooked1/2 cup raisins1/2 toasted wheat germ
Directions
Cream shortening with sugar, add the egg and mix well. Mix flour, baking soda, cinnamon and nutmeg together and add to creamed mixture. Blend until smooth. Add mashed banana, oatmeal, raisins, and wheat germ next. Blend. Drop by teaspoonfuls onto a greased cookie sheet and bake at 400 F for 12-15 minutes. Grease cookie sheet between each use for best results. Makes about 3 dozen cookies.

    shortening is not healthy by any means. even though it may say 0g. trans fat it's not. hydrogenated oil. look it up. mind boggling artery clogging stuff. just trying to inform. - 8/14/07
