Basic Potato soup

Ingredients
5 potato med to large1 cp onion1 cp celery2 cp non fat milk6 cp chicken brothSalt and pepper to taste1 tsp Thyme1 Tbsp Parsley
Directions
Saute onion and celery in pan with olive oil.Rough cut potatos and boil in the broth til fork tender.DO NOT drain potatos.Remove about 2 cps of potatos and blend in blender with 1 cp milk (this thickens the soup).Add back to potatos and broth and add celery and onion to soup salt and pepper and add Parsley and Thyme and add other cp of milk if needed for consistancy that you like.In order to thicken more you can puree more of the potatos or add a small amount of corstarch mixed with a small amount of water and cook until thick. (calories etc figured without cornstarch so adjust if you choose to use it) (amount of servings is approx)

This is just a basic recipe make it special by adding your own touches!! also can sub fat free half and half for milk for creamery consistancy - I like it this way and less calories this way...Also you can substitue leeks for the onion they are great too!! remember to adjust calories etc if you change soup recipe.....
