Cheddar Broccoli Soup

Ingredients
1 T. olive oil1/2 onion1 garlic clove2 1/2 c. imagine soup vegetable broth2 c. broccoli florets1 med. potato, peeled and diced3/4 c. grated cheddar1/4 c. buttermilksalt and pepper to taste
Directions
Saute Add broth, broccoli and potato to med. sized pot. Bring to a boil. Lower heat and simmer for 7 minutes. Blend with an immersion blender or in batches in blender until smooth and creamy. Return to pot. Stir in cheddar and buttermilk and warm over low flame. Adjust seasonings.
