Low Calorie Corn Muffins

1 cup flour1 cup cornmeal, yellow2 scoops protein powder2 TB Splenda2 tsp baking powder1/2 tsp salt1 egg1 Cup skim milk1/4 cup unsweetened applesauce
Preheat oven to 400 degrees. Spray 12 cup muffin pan with cooking spray.
Mix dry ingredients in a bowl. In a second bowl, mix egg, milk and applesauce. Stir wet ingredients into dry ingredients just until moistened. Evenly divide the batter into the 12 cups of the muffin pan.
Bake at 400 degrees for 14-16 minutes until edges are brown and inserted toothpick comes out dry. Cool on cooling rack and serve warm with low fat margarine and/or if desired.
