Leek Omelette

Ingredients
3 leeks (white and green) chopped up into tiny pieces1 bushel of parsley, chopped up finely6 eggsOil for frying
Directions
Rinse leek well, chop up.
In a large bowl, mix leek, parsley and eggs (can add toasted and crumbled bread if you want) and beat until it has the consistency of omelette mix.
Season (salt & pepper)
Take a large spoon and use it to put mixture in frying pan (with minimal oil)
Makes ~ 15 small individual sized omelettes
