vegie filled quinoa

Ingredients
1 box quinoa2 cups low sodium chicken stock2 cups water1 red bell pepper1 roasted red pepper1/2 sweet onion2 or 3 garlic cloves1 1/2 cup frozen artichoke hearts dried basil
Directions
add quinoa, water and stock to a pan and bring to a boil, reduce heat and simmer 15 minutes (or untill water is gone)
rough chop all the veggies and mince the garlic
spray a skillet with cooking spray and add veggies, when they are done (about 7 minutes) add to the quinoa, mix well and add ricotta, monterey jack and basil. Mix again and serve!

    This does look good. I buy my grains bulk so I'm wondering how many cups or grams is in a "box". I'm guessing about 2 cups by the look of the recipe but I'd like to be sure. Anybody know? - 1/9/10
