Peanut Chicken & Noodles

Ingredients
1 large chicken breast, diced1 pkt Taste of Thai peanut sauce seasoning mix1/4 cup no sugar added peanut butter1 can lite coconut milk3 pkgs ramen noodles1 tsp chicken base1/3 cup diced onion1/4 cup shaved carrots
Directions
Heat chicken in a pot on the stove until no longer pink. Meanwhile, boil water and cook ramen noodles (discard ramen seasoning packet). Add 1 tsp chicken base, peanut sauce seasoning packet, coconut milk, and peanut butter to chicken and stir together. Drain noodles and add along with onions and carrot shavings to peanut chicken mixture and stir to coat. Makes about 6 cups.
