Tofu Lasagna

1 block (14 oz) extra firm tofu1 egg1/2 cup italian style bread crumbs1 cup Marinara sauce2/3 cup shredded Mozarella
Drain tofu, slice into 8 pieces and pat out extra water. Use the egg to coat each piece then coat each piece with bread crumbs. Lay on cookie sheet (spray with cooking spray first), and bake at 400 degrees for about 10 minutes per side or until brown.
Use a glass casserole dish, 8x8 works well. Place 4 slices of the baked tofu on the bottom, cover with half the sauce and half the cheese. Add the other four slices on top and cover with the other half sauce and cheese. Put back in the oven for another 10 minutes or until the cheese is brown.
