Refrigerator Raisin Bran Muffins

Ingredients
15 oz box Raisin Bran cereal3 c white flour2 c whole wheat flour2 c sugar1 c Splenda granular5 tsp soda2 tsp salt1 c egg beaters1 1/2 c ground flax meal (if left out, substitute additional 1/2 c oil)1/2 c vegetable oil1 qt lowfat buttermilk1 c nuts
Directions
Mix dry ingredients well, then mix wet ingredients in a separate bowl. Add wet to dry and mix until just combined. Store in large jar or tupperware containers in refrigerator until ready to use, for up to 6 weeks. When ready to bake, preheat oven to 400 degrees and bake about 25 minutes until a toothpick inserted comes out clean.
Makes approximately 50 muffins.
