pot stickers - per individual potsticker

Ingredients
Ingredients:1 pound Ground Pork1 pound Ground Chicken2 teaspoons ginger minced2 teaspoons ginger minced1 cup finely chopped Green Pepper1 cup finely chopped Scallions/Green Onions3 tablespoons Soy Sauce3 tablespoons Teryaki sauce100 Wonton wrappers - 3-1/2" square or circular, can use smaller ones as well.
Directions
Make 2 batches, 1 with pork and soy sauce. 1 with chicken and teryaki sauce.

Pork - Mix the following
1/2 cup each minced pepper and minced green onions
1 pound ground pork
2 teaspoons ginger paste or minced ginger
3 tablespoons soy sauce

Chicken - mix the following
1/2 cup each minced pepper and minced green onions
1 pound ground chicken
2 teaspoons ginger paste or minced ginger
3 tablespoons teryaki sauce

To make the pot stickers -
Take approximately 1 teaspoon of filling. Place in the center of a wonton wrapper. Rub water over the edges of the wrapper and pinch sealed. Place the sealed pot sticker on a waxed paper lined tray.

Continue until each wrapper is filled. Do not let the sealed potstickers touch or overlap. To keep the wonton wrappers from drying out, cover the ones you are not using with a damp paper towel.

When done making the potstickers, freeze or cook.

To cook the potstickers, spray a skillet with Pam or other non-stick spray. Lay one layer of potstickers on the skillet. Add 1 cup of water or of chicken broth to the skillet. Cover with a lid and cook on high until the water or broth is absorbed - about 7-10 minutes.

    Is the filling cooked first? I want yo make potstickers. The problem I'm having is that I don't want loose meat inside the wrap... So I'd rather not pre-cook the meat. That being said, if I cook potstickers with a raw meat mixture inside, will this cooking method thoroughly cook the meat? - 4/10/13
