Carrot Cake Pancakes

Ingredients
1 1/4 cups whole wheat or white WW flour1/4 chopped walnuts2 tsp baking powder1 tsp cinnamon1/8 tsp ground nutmegdash clovesdash of ginger1/4 cup brown sugar1/2 cup low fat milk1/4 cup low fat sour cream (or yogurt)1 1/2 tsp vanilla extract2 large fresh eggs, beaten2 cups finely grated carrotcooking spray (OPTIONAL)
Directions
Put all dry ingredients in a large mixing bowl. Add all remaining ingredients. Mix just until blended.
In a lrage non-stick skillet (you may want to spray with non-stick spray) add about 1/4 cup of batter for each pancake. Cook until edges are dry and bubbly and then flip over.
