Peanut Butter Banana Muffins

Ingredients

1 cup brown sugar1/2 cup smooth all natural peanut butter1/2 cup pureed cauliflower (or carrot)1/2 cup pureed banana1 large egg white1 cup whole wheat flour1 tsp baking soda1 tsp baking powder
If you have pureed the cauliflower before hand this goes together in like 5 min.
If not steam cauliflower, then puree.....will need 1/2c for this and can reserve rest for later!
makes 12 muffins
Mix all wet ingredient, reserving 1/2 cup of brown sugar.
Mix all dry.
Then mix dry into wet ingredients. do not overmix.
Then mix in last 1/2c of brown sugar in 2 or 3 stirs.
Spoon into 12 sprayed muffin cups.
Cook at 350degrees for 15-20 min. Cool slightly then will pop out easily to cool rest of way!
