Vegan Oats 'n' Apples Muffins

Ingredients
1 cup oats1 cup Rice Milk ( I used vanilla)3 teaspoons Ener-g Egg replacer1 cup whole wheat flour1/2 cup applesauce1/2 cup brown sugar1/2 tsp baking powder1/2 tsp baking soda1/2 tsp sugar and cinnamon (for sprinkling)
Directions
Soak oats in rice milk for one hour.

Add applesauce to oat mixture.

Mix dry ingredients in a seperate bowl.


Add the dry ingredients to the wet and mix until just combined. Heat oven to 400 degrees, bake for 15-20 minutes.
