Chocolate Banana Crepes

Ingredients
2/3 cup unsweetened cocoa powder1 2/3 cup granulated sugar1 tsp vanilla extract2 large eggs1 cup 2% milk2/3 cup AP flour1 pinch salt1 1/2 tsp unsweetened applesauce4 large bananas
Directions
Combine eggs, milk, flour, salt and applesauce and blend until smooth. Cover with plastic wrap and place in refrigerator for one hour.

After about 50 minutes of the hour, go ahead and start chocolate sauce. Combine cocoa, sugar and milk in small sauce pan over medium head. Bring to boil and let boil for about 1 minute. Remove from heat, let sit for about 1 minute and stir in vanilla.

Heat non-stick skillet over medium-high heat and spray with non-stick cooking spray or brush with oil. Pour 1/4 cup batter into pan and tilt to coat entire surface. Cook until golden on the bottom (about 1-3 minutes) and flip, cooking additional 1-3 minutes until golden. Remove from pan and continue to cook crepes.

Cut banana in half long ways. Using half of the banana, slice it into chunks and place on crepe. Fold crepe and drizzle about two tablespoons of the chocolate sauce over it. Enjoy.
