Fiesta orzo salad

Ingredients
4 ounces orzo, 1 cup total red, yellow & orange bell peppers, 1/8 cup jalapeno peppers, I cup of frozen corn, the juice of 2 limes, kosher salt to taste, pepper to taste, 3 Tbsp. of fresh cilantro, 2-4 Tbsp. canola oil
Directions
I have sized this recipe down from one I created for a gourmet foods market I used to work in. When I made it for work, I would cook 4 boxes of orzo, so a batch this small, I am honestly not quite sure how many & what size the portions will be. Start cooking the orzo. While waiting for orzo to cook, finely chop bell peppers & cilantro. Finely dice the jalapeno peppers. Drain cooked pasta, rinse thoroughly with cold water. Add oil, lime juice, kosher salt & pepper to taste. MIx in all the vegetables and cilantro. For variation and a boost of protein, try adding 1/2 cup of black beans.
