Ingredients

3 Egg Whites (room temperature)1 T. Cider Vinegar1 t. Vanilla Extract2 packets (or approximately 1/2 t.) Stevia
1. Preheat oven at 300 degrees.
2. Gather all your equipment: medium sized bowl, small bowl, wire wisk (electric works best), measuring spoons, parchment paper or baking sheet, cookie sheet, spoon.
3. Gather all your ingredients.
4. Place parchment paper or baking sheet on cookie sheet and set aside.
5. Place egg whites into medium sized bowl. Allow them to come to room temperature.
6. Mix vinegar, extract and stevia in the small bowl and set aside.
7. Wisk room temperature eggs to soft peak (the peaks will melt back into themselves).
8. Slowly add the contents of small bowl into the egg whites.
9. Wisk until stiff peaks are formed.
10. Spoon dollops of egg white mixture onto the baking pan. There is no need to worry about too much spacing between cookies. This batch will make about 9 cookies.
11. Place pan into oven on middle wrack.
12. Set timer for 40 minutes.
Cookies will be golden brown and soft to the touch slightly spongey when you take them out of oven. Allow them to cool for about 5 - 10 minutes before taking them off the pan. As the cookies cool they will be come crisp.
Now, here's the secret ... this entire pan of decadent looking cookies are only one serving. Yes, I said one serving. Your dieting friends will love you!
