Cilantro and Lime Rice

Ingredients
1 T olive oil1 c long grain rice1 1/2 c chicken broth (or vegetable)2 T lime juice, freshly squeezedzest of one lime1/2 c cilantro, chopped1 tsp salt
Directions
Heat oil over medium-high heat, add rice and allow to cook for 2 minutes. Add other ingredients and bring to boil. Cover and reduce heat to simmer, cook until rice is done.

Makes 4 - 1/2 c servings.
