1 cup unsalted butter, room temp3/4 cup packed brown sugar1/2 c. date sugar or other dark cane sugar1 egg2 ts vanilla extract1 1/2 cup whole wheat flour1 ts baking soda1/2 ts salt 1 1/2 ts ground cinnamon3 heaping cuts uncooked rolled oats12 oz bag semi-sweet or dark chocolate chips1 cup walnuts , chopped1 cup unsweetened shredded coconut flakes
Makes 50, 2 inch cookies.
Preheat oven to 375 F
Cream butter and sugar till lightly fluffy. Beat in egg and vanilla. In a separate bowl, mix flour, baking soda, spices. Add to creamed mixture. Mix well. Add oats. Fold in nuts, chocolate and coconut. Spoon dough on ungreased cookie sheet making about 2 inch size cookies. Bake 10-12 minutes. Cool on cookie sheet for 5 minutues. Remove.
Makes about 50 cookies at about 150 calories each. You can make a dozen at a time freezing the rest in a ziploc freezer bag. Just remove 15 minutues before baking to thaw.
