Paula's Italian Pork Chops

Ingredients
4 medium pork chops (I use 2 butterfly chops, each cut in half)2 cans Del Monte Italian Style Stewed Tomatoes1/2 medium onion, diced1 cup diced carrotsdash of ground basildash of garlic powderdash of black pepper3 tbsp corn starch1 cup water
Directions
1. Brown pork chops in olive oil in a large skillet
2. Remove pork chops from skillet
3. Saute onions and carrots in skillet, using drippings from chops
4. Add stewed tomatoes, 1 cup water and seasonings, bring to a boil
5. Return pork chops to skillet, cover with some of the sauce
6. Cover & simmer for 40-50 minutes until chops and carrots are cooked through
7. Mix cornstarch with 1/2 cup cold water
8. Add cornstarch mix to skillet, stirring until sauce begins to thicken (may need to remove chops from skillet to mix well)

Serve over pasta or rice (not included in nutritional calculation)
