Toni's Black Bean Soft Tacos

Ingredients
Beans: Canola or Olive Oil Cooking Spray2 cans Bush's Low Sodium Black Beans, drained1 clove Elephant Garlic6 green onions, chopped1/3 of a sweet onion, finely diced (dice the rest for Pico de Gallo and garnish)1/3 packet McCormick Taco Seasoning Mix (about 1 1/4 T)8 fresh corn tortillasPico de Gallo:1 t extra virgin olive oil1 cup ripe tomato, diced1/4 cup sweet or red onion1/2 jalapeno pepper, seeded and finely chopped1/2 clove elephant garlic, finely chopped2 T fresh cilantro, choppedJuice from a lime wedge1/4 t Kosher SaltToppings:Pico de Gallo (above)1 t Breakstone Reduced Fat Sour Cream1/8 cup Reduced Fat Mexican Style Cheese, shreddedLettuceSalsaetc.
Directions
Makes 16 soft tacos (8 servings).

Filling:
Coat bottom of saucepan with cooking spray. Saute garlic and onion, then add beans, taco seasoning, and 1/4 c water. Bring to a boil and reduce heat, simmering till liquid evaporates. Lightly mash beans, leaving some whole.

Heat corn tortillas in 350 oven to just warm.

Pico de Gallo:
Combine all ingredients, preferably an hour or two before meal time.

Add taco filling, pico de gallo, and other toppings (optional) and enjoy.
