Gluten Free Chocolate Chip Coconut Cookies

Ingredients
1/4c Softened Butter1/4c Oil3/4c Dark Brown Sugar2 Egg Yolks1tsp Vanilla1/3c Water1/2tsp Xanthan Gum3/4c Potato Starch1/4c Tapioca Flour1/4c Coconut Flour1/4tsp Baking Soda1/2 tsp Salt1c Semisweet Chocolate Chips1/2c Shredded Sweetened Coconut
Directions
Preheat oven to 350.

In bowl cream Butter, Oil, and Brown Sugar.
Add Egg Yolks, Vanilla, and Water.
Mix well.
Add remaining ingredients except Chips and Coconut.
Mix well, remove all lumps.
Fold in Chips and Coconut.

Drop rounded teaspoonfuls onto greased baking sheet.
Bake 8-10 minutes.

Makes about 2 dozen amazing cookies.

    THESE ARE WONDERFUL!!!! So tasty, light and crispy. A decent sized cookie for 78 cals. SOOO good though it's hard to eat just one. - 1/21/13
