12 ounce package of rice noodles10 ounces cooked chicken breast, shredded2 bottles Makoto ginger dressing1 bag (2 cups) grated carrots1/4 cup seasoned rice vinegar
Cook rice noodles according to package directions. Meanwhile, mix remaining ingredients in large bowl. Drain rice noodles. Using a pasta server, hold a spoonful of noodles over bowl, while cutting them with scissors. Mix well. (I find that if I don't cut them, the noodles clump up and don't mix well with the rest of the ingredients.) Makes 12 cups.
