Cher's Potato Skins with Yogurt and Turkey Bacon

Cut 8 raw potaoes in half
Hollow out the 16 halves with a melon baller until they weigh 2 oz each.
Bake until cooked and crispy
Chop chives and mix with yogurt
Cook bacon
Top skins with with 1/8 cup cheese while still hot to melt
Just before eating:
Each potato skin gets 1 tbs yogurt/chive mix each
1/2 slice bacon
1 tbs salsa on each
As much lettuce and tomatoes as you want (really, does it matter and how much could you fit on a potato with all that other stuff?)
