Low Fat Chocolate Pudding

Ingredients
1 T unflavored gelatin1/3 c boiling water2/3 c sugar1/3 c cocoa1/4 c cornstarch1/8 t salt3 c 1% milk2 t vanilla extract
Directions
Makes 8 servings.

Dissolve gelatin in boiling water in a small bowl and set aside.

In a medium saucepan, mix sugar, cocoa, cornstarch, and salt. Gradually add half the milk, whisking until smooth. Add the rest of the milk, then turn the heat to medium and cook, whisking constantly, until mixture comes to a boil, about 10 minutes.

Remove from heat and add vanilla extract and reserved gelatin and stir until combined. Pour into serving bowls and refrigerate until chilled.
