low fat spinach dip

Ingredients
2/3 cup of Cottage Cheese4 oz of Nefchatel Cheese1.5 oz of Taleggio* CheeseAbout 1/4 cup of feta or less.3/4 pack of frozen spinacha splash of waterSeasoned to taste--fresh garlic, pepper, allspice, Old Bay, Sazon Goya, ground black pepper, salta blender*You can definitely substitute the Taleggio for any other soft cheese. It will change the fat content, but you aren't really using a lot of it. I just happened to have a ton of it. Once I (if ever) run out of taleggio I'm going for a cheaper soft cheese--Mozzarella or a Brie.
Directions
Cook the frozen spinach and let cool in the refrigerator. (It is better if the spinach is cool, but it won't really hurt anything if the spinach is hot and all the other ingredients are cold)

Blend the cottage cheese with a little bit of water until it is smooth.

Add the other cheeses and the seasonings. I cut the cheese into small chunks so as not to abuse my cheap little blender. Season it to your taste. I used fresh garlic, ground black pepper, a dash of Allspice, a dash of Old Bay, and a dash of Sazon Goya, and a dash of salt..

Blend until smooth.

Add spinach to your preference. I like a lot of spinach and less dip. So, if you use 3/4 a package of the frozen spinach, that is what you will get.

Eat with multi-grain triscuits :)
