Omurice (Omelette Rice)

0.5 cup White rice (cooked)2 tbsp Vegetable oil1 cup Chopped white onion1 cup Chopped green bell peppers1 cup Chopped red/yellow bell peppers2 tbsp Tomato (pasta) sauce1 large Egg2 tbsp Egg white2 tsp Salt*Optional: 1 tbsp Salsa*Optional: 1 tsp Thai hot sauce*Optional: Ketchup
Heat up wok and 1 tbsp of vegetable oil. When oil is hot, stir fry onions until slightly transparent, then stir in bell peppers and 1 tsp of salt. Stir fry until most of the water has evaporated, then add the cooked rice and tomato sauce. Stir fry rice until completely mixed with vegetables (it may be necessary to add a bit more oil at this point if rice is sticky).
Set aside.
In another bowl, whisk egg, egg white, and 1 tsp salt together. Heat up a frying pan with 1 tbsp vegetable oil. When oil is hot, pour in egg mixture. Make sure it is spread out flat in the frying pan. When omelette is almost ready, put fried rice mixture on top and use spatula to fold omelette over rice (like a tortilla wrap). Transfer to plate and decorate with ketchup and/or salsa on top.
Options:
- Can add some spicy sauce to the tomato sauce
- Can stir fry chicken breast chunks in (before bell peppers)
- Can use some butter (less vegetable oil) to fry the egg
Tips:
- Cook the rice the night before, fluff it up in ricecooker (just break up the pieces), and leave overnight so that it's a bit aired out.
- Keep omelette as thin as possible
