Vegetarian Chicken Noodle Soup

Ingredients
1 pkg (4 cups) Quorn Chicken Tenders1 qt. water4 medium carrots, cut into 1/2 inch slices (about 2 cups)4 medium stalks celery, cut into 1/2 inch slices (about 2 cups)1 Tbsp. salt1 tsp. sugar1/4 tsp. pepper3 chicken bouillon cubes2 cups uncooked egg noodles
Directions
Heat all ingredients except noodles and Quorn to boiling in pan. Reduce heat. Cook and simmer 45 minutes.

Cook noodles. Add Quorn and noodles to broth and heat another 5 minutes, until hot.

    I made this yesterday and it turned out amazing! I omitted the sugar and egg noodles, added italian and poultry seasonings and some onion that I sauteed in olive oil until translucent. I also used Low Sodium Vegetable Broth plus 4 cups of water instead of using the bouillon. So much flavor! - 6/4/12
