Mint-Lime Almond Pesto Chicken

fruit and juice of 1 lime0.25 cup slivered almonds, smashed15 leaves fresh mint, finely chopped1 tsp extra virgin olive oil5 ounces boneless, skinless chicken breast
pound the chicken so that it is flat and thin
add all other ingredients into a bowl and blend until mixed
add 3/4 of mixture to inside half of chicken and then fold the chicken over
add remainding mixture to top of chicken
bake at 385 for 10 mins and then at 350 for another 15, or until chicken is not pink anymore and juices run clear
divide chicken between three people for 3 servings.
