Italian Cheese Frittata

Ingredients
6 Eggs2 oz Asiago Cheese (or Gruyere)2 oz Romano Cheese (or parmesan)1 tsp Olive oil1 tbsp Butter Salt and pepper to taste
Directions
Heat olive oil and butter in omelet pan. Grate Asiago and Romano cheese. In medium-size bowl, beat eggs until mixed; fold in cheese, salt and pepper to taste. Pour eggs into hot butter and oil, stir lightly until eggs start to set. Shake pan to loosen frittata. Let cook on medium heat until bottom is browned. Put a plate over omelet pan; Invert frittata onto plate, side frittata back into pan. Cook until bottom is browned. Cut into four servings - ENJOY!
