Low Salt Vegetarian Marinara

Cooking spray5 medium to large sized mushrooms, sliced1/2 large vidalia onion, choppedTomato Puree, one large canDiced tomatoes, no salt added, one 14.5oz canone tsp sugaroregano, basil, marjoram, thyme, and garlic to taste
Spray large saucepan with cooking spray
Sautee mushrooms and onion over medium high heat until onions are just soft, but not transparent. Add herbs and sautee one or two minutes longer.
Add canned tomatoes, tomato puree, and sugar.
Reduce heat to low and simmer at least 30 minutes to one hour.
Makes 6 3/4 cup servings
