2 tbsp. olive oilchicken carcass1 1/2 c. chopped onions1 c. chopped celery1 c. diced carrots1/2 c. chopped green onions2 tbsp minced garlic1/4 c. fresh parsley leaves2 tbsp. chopped fresh basil4 bay leaves2 c. chopped fresh vegetablespinch crushed red pepper1 qt chicken stock1 qt water1 c. cooked rice
1. heat oil in pan. season chicken carcass with essence. when oil is hot, saute chicken for 5 min.
2. add onions, celery, carrots, green onions, minced garlic, parsley, basil, bay leaves, season with essence, saute for 4 min.
3. add chopped fresh vegetables and red pepper, saute 1 min.
4. add stock and water, and uncooked rice. simmer 20 min.
5. separate meat from bones.
