Spinach, Mushroom, and Sausage Lasagna

9 whole wheat lasagna noodles1 package Jennie-O hot Italian sausage links3 cloves garlic, chopped24 oz. frozen leaf spinach2 10 oz packages sliced mushrooms1 28 oz can crushed italian tomatoes1 14 oz can diced italian tomatoes1/2 cup chopped basil3 cloves garlicGround pepper to taste1 lb low fat ricotta12 oz part skim mozzarella, grated
Makes 9 servings.
Cook lasagna noodles 2 minutes less than al dente.
Brown sausage, Add 3 cloves garlic, chopped, and the mushrooms. Saute for 5 minutes, add the spinach and cook until spinach is hot, and set aside
Mix tomatoes, fresh basil and pepper together
Put 1/2 cup of tomato mixture into the bottom of a 13x9 inch pan
Put 3 noodles, 1/2 of ricotta, 1/2 of meat mixture 1/3 of remaining tomatoes and 1/3 of mozzarella.
Add 3 noodles, 1/2 of meat mixture, 1/2 of ricotta, 1/2 of meat mixture, 1/3 of remaining tomatos and 1/3 of mozzarella.
3 more noodles, remaining tomato mixture
Cover with foil, Cook in 375 degree oven for one hour.
Take off foil, sprinkle with remaining mozzarella, and return to oven for 10 minutes.
Let stand 10 minutes before cutting.
Don't let the broth in the pan go to waste--it's delicious.
