Jasmine Rice with Lemongrass

Ingredients
125g Thai jasmine rice250ml oz water1 lemongrass stalk, bruised
Directions
Rinse the rice and then place rice along with the lemongrass stalk into a saucepan, cover with the hot/boiling water, seal the lid, bring it back to the boil and then and simmer gently for 10-12 minutes, turn off the heat WITHOUT disturbing the lid! Leave for 10 mins, then remove the lid, gently fluff up the rice with a fork and serve.
Serve with the Monkfish curry.
