Pepper Jack Mashed Cauliflower

Ingredients
1 Head of fresh Cauliflower2 Slices of Pepper Jack Cheese1/2 cup of Nonfat Milk2 Tblsp of Reduced Fat Low Calorie Margarine
Directions
Break the cauliflower florets from the cauliflower head. Steam them until soft and tender to fork about 6-8 minutes. Drain off water and using a mixer add the milk mixing well until cauliflower takes on a mashed potato like look. Add the butter. Then simply add the 2 slices of cheese to the top and using the mixer just break the pieces up into the cauliflower and then let sit and allow the cheese to melt into the cauliflower. Garnish with a bit of parsley for color! ENJOY!
