italian style baked vegetables

Ingredients

1 cup chopped carrots2 stalks celery chopped3-4 large red potatoes chopped1 red bell pepper choppedabout 3/4 cup mushrooms chopped1 onion (any type) choppedabout 1/2 cup Italian dressing (your choice)
1. preheat oven to 425 degree
2. after chopping all ingredients, mix in large bowl with dressing
3. lightly butter, oil, or grease a baking pan(the size doesn't matter, your preference, however a 15 by 11 inch pan is recommended)
4. pour vegetables in pan and bake for about 30 minutes stirring occasionly
(some vegetables may look burnt or black, especially the ones on top, dont worry! they add a nice crispy taste in every couple bites)
makes about 6 1/2 cup servings
