Red Quinoa with Parmesan Cheese and Baby Spinach

Ingredients
1 cup Red Quinoa2 cups Baby Spinach1/4 cup Parmesan Cheese1 Tbsp Olive Oil4 cloves Garlic
Directions
Cook quinoa according to direction on box.
Once quinoa is almost done, add olive oil and garlic to a frying pan. Cook on med-high heat just until garlic starts to turn light brown. Be careful not to burn the garlic - turn down heat if necessary.

Combine the quinoa with the olive oil and garlic. Add the spinach. Once spinach has wilted, stir thoroughly and add the parmesan cheese. Stir again until cheese has melted.

Top with extra garlic powder and pepper, to taste.

Enjoy!

    Loved it! I think next time I make it I will use the white quinoa though, I'm not really fond of the texture and crunchiness of the red. Cherry tomatoes would make a great addition to this also. - 2/11/11

    I made this tonight as a side with dinner. I made a swordfish dish that called for feta - so I used some from that portion and sprinkled on top of your Quinoa and it really boosted the flavor. Thanks for suggesting that. - 3/7/10

    Crumbled feta cheese is also really good. Just be sure to add it when the quinoa is still nice and hot so it fully melts.
