1.5 cups whole wheat rotini pasta12 oz lean ground beef1 small can enchilada sauce1.5 cups mushrooms1 chopped onion1/2 chopped green bell pepper1-12 oz can whole kernel corn, drained1-12 oz. can diced tomatoes, drained1 tsp. garlic powder1 tsp. salt1/2 tsp. cumin powder
cook rotini according to package directions
brown onion, pepper, and mushrooms, remove from pan
brown ground beef
return veggies to pan
add cooked rotini to pan
add tomatoes, corn, and enchilada sauce
sprinkle with salt, garlic powder and cumin powder
simmer on low for 15-20 minutes
Makes about 6 1-cup servings
